A little bit about Ginger…

Ginger Pierce was born in Alaska and raised in the San Francisco Bay area, where at a young age she gained an appreciation for the bounty of fresh, local produce. Her mother, an avid gardener, gave her an early affection for backyard produce, often yielding delicious tomatoes and a variety of fresh fruits. Following her family’s gate, Ginger attended the California Culinary Academy in San Francisco where she learned to utilize the fresh produce she grew up on. After graduating, Ginger landed a job at Roxanne’s restaurant in Marin County, California. Roxanne’s, a plant-based-raw food-fine dining restaurant was one of the first of its kind. She was often tasked with selecting produce from the San Francisco Ferry Plaza and San Rafael farmer’s markets and spent her free time working at Star Route Farms in Bolinas California.

In 2004, Ginger set her sights on New York City, and had the fortune to end up at Barbuto working for acclaimed chef, Jonathan Waxman. It was there that Ginger went from line cook to Sous Chef, realizing a serious love for Mediterranean cuisine. Waxman, a fantastic teacher, instilled a serious appreciation of simplicity in Ginger. After Barbuto, Ginger went on to work at Provence in SoHo, for the dynamic restaurant couple, Marc Meyer and Vicki Freeman. She continued on with them at their restaurant Five Points as their Chef De Cuisine. Following her work at Five Points, Ginger joined forces with her husband, Preston Madson to Co-Executive Chef Freemans, Peels and ISA restaurants.

In 2015, Ginger opened the 1 Hotel Central Park as the Executive Chef, also running Chef Jonathan Waxman’s revival of his beloved NYC restaurant Jams. Her passion for small local farms, community and sustainability drew her to join the opening of the 1 Hotel brand. This desire to effect change on a larger scale has kept her with the brand ever since.

In August of 2021, Ginger relocated to take over as the Executive Chef of 1 Hotel West Hollywood. With an in-house garden, an adjacent bee hive and some of the best local farms the country has to offer, Chef Ginger celebrates the seasons with each menu she creates. Since arriving in Los Angeles, she has championed several local charities, including an ongoing partnership with LA mission. She endeavors to incorporate her passion for giving back and protecting the environment into the daily operations.
